While Valentine’s Day is not a romantic day to me, I find it a happy day nonetheless. It provides me with a great excuse to try something new… and bring on silly or tacky preparations, like these pancakes!
This recipe is without refined sugar and can be ready quicker than a cup of coffee.
You can draw hearts or write messages in the pan so don’t wait until Valentine’s to make them! They are wonderful as a birthday breakfast, a weekend brunch or even as edible good news for someone special! (Check the pictures for some fun ideas.)
And for a full experience, enjoy these pancakes with the original Canadian maple syrup (rather than that ‘thing’ called syrup, like ‘aunt jemima’, which contains nothing but bad sugar).

Ingredients
1 large egg
1 cup of self-raising flour*
1 cup of milk
pinch of salt
oil (not olive oil)
*If you are using plain flour add 2tsp of baking powder
Optional:
maple syrup
fresh fruits, nuts
greek yoghurt
chocolate
Utensils
1 large bowl
1 measuring cup (1 cup)
1 hand-whisk
1 squeezable bottle (see picture)
1 large pan
1 spatula
1 plate
kitchen roll
Preparation
1. Crack the egg inside the bowl and whisk for 30sec.
2. Add the flour, milk and salt. Whisk until you get a smooth batter without lumps (it takes 2 min or less).
3. Put the batter inside the squeezable bottle and let it rest.
4. Add a little oil to the pan and put it on medium-low heat. Shake the pan to cover the bottom completely with oil.
5. Once the pan is hot, carefully (if the oil is too hot it will split a bit) start drawing your hearts or messages. Once the surface looks dry the pancake is ready. I only cook them on one side because they are thin and the consistency will be more on the crispy than the fluffy side.
6. Carefully remove the pancake from the pan using the spatula.
7. Eat them warm.
