The Healthy Bircher-Müesli

 

Last winter we spent a few days in the Austrian Alps and every morning I woke up with only one thing in mind; their delicious Bircher-Müesli.

I recently realised that it is just as popular here in England as it is in Switzerland, Germany or Austria. I’ve even seen ready-to-go pots in Starbucks.

A Swiss physician developed Bircher Müesli in the 1900s; he went on to recommend it to his patients as part of their treatment.

The basic ingredient of this Müesli is raw oats, which are soaked overnight and mixed with shredded apple, yoghurt, honey, nuts and fruits of your choice. The result is a dense and fresh yoghurt with a high-fibre content, vitamins and proteins…there is no better way to start your day!

The best thing (at least for a mum) is that adults and children love it equally so it is a healthy, quick and yummy breakfast for the whole family.

Fancy a treat in the evening? Replace the big bowl of ice cream with this Müesli (add bitter chocolate chunks and lots of fruits), put on your favourite film and voilà!

Equipment

1 big bowl or one big tupperware (for the basic mix)

1 serving bowl

1 grater

1 chopping board

1 knife

1 tablespoon (a serving spoon not a measuring spoon)

Ingredients for the basic mix (6-8 portions)

200g or 2 cups of raw oats

450ml of milk (cow’s milk, coconut milk, oat milk, etc) or plain water

Juice from one lemon

Instructions for the basic mix (Prepare it the night before)

  1. Put the oats in a big bowl or tupperware and soak them in the milk or water. Add the lemon juice.
  2. Cover the mix with plastic wrap or a lid and leave it in the fridge overnight.

**Depending on the type of milk it can last for 2-3 days; if you use water it can last longer.

Bircher-Müesli Ingredients (1 individual portion)

1 grated red apple, skin on (Pink Lady or Fuji are my favourite)

1 big tablespoon of the soaked oats (basic mix)

1 tablespoon of milk or water (to loosen the oats)

1 big tablespoon of Greek yoghurt (you can use a low fat Greek yoghurt)

Your favourite fruits (I recommend mango, berries and passion fruit)

Your favourite nuts

Drizzle of honey or a sweetener of your choice (the amount is up to you).

Bircher-Müesli Instructions (1 individual portion)

  1. In a serving bowl put the grated apple, one big tablespoon of the soaked oats, one tablespoon of water or milk, the honey or sweetener and stir well.

2. Add one big tablespoon of Greek yoghurt and top with your favourite fruits and nuts.

3. Breakfast is ready!

Notes:

Some people like raisins or cranberries in their Bircher-Müesli. You can add them to the basic mix and let them soak overnight with the oats.

Some restaurant or commercial Bircher-Müesli is made using condensed milk or full fat cream so always check the ingredients for amounts of fats and sugars.
